Biography:
Momoko Hidaka is a doctoral student at the Graduate School of Agriculture, University of Miyazaki, Japan. Her research focuses on the breeding and utilization of open-field flowering sweet potato (Ipomoea batatas (L.) Lam.), with particular interests in disease resistance, flowering characteristics, polyphenol composition, and antioxidant properties. She is also investigating the potential of sweet potato flowers as a novel nectar source for honey production. Through her research, she aims to explore new applications of sweet potato genetic resources and contribute to the development of functional and region-specific food materials.
